1-Package House Foods 12 oz Extra Firm Tofu
1-cup Butternut Squash, peeled and diced
1-cup Eggplant, diced
1-can Hunts Diced Tomatoes
1-Medium Red Onion
1-cup Organic Carrots, diced
1-cup Celery
1-cup Frozen Spinach
1-cup Roasted Bell Peppers
1-tsp Black Pepper
1-tsp Himalayan Sea Salt
1/4 tsp Cumin
1-tbsp Italian Seasoning

KITCHEN SUPPLIES:

1-large Casserole Dish
Measuring cups
Oven 350 Fahrenheit 60-minutes
Oven mitts
Plate for serving
Spatulas
Spoons slotted
Timer
